Bombay Sapphire CollinsThis version of a Tom Collins is one of mine and Nicky's favourite cocktails. It's a light and tangy alternative to a gin and tonic and always goes down well during summer.
60ml Bombay Sapphire Gin
Fresh squeezed juice from 1 lemon
2 heaped tsp of castor sugar
soda water
Serve with ice in a high ball
